Ben Charest's Farmer's Market Tomato Sauce

If you have never had tomato sauce made from fresh tomatoes, you have never had tomato sauce. Before tomato season is over, run to your nearest farmer's market, find a stall selling tomatoes, and ask then if they have any "sauce" tomatoes. They will likely pull out some huge, juicy, but less than aesthetically perfect tomatoes from somewhere hidden (because who would buy less than aesthetically perfect tomatoes?) and give you a deal on them. Moreover, they'll likely give you a wink and a smile, because they too know how amazing fresh-made tomato sauce is. You can then take them home and make  a simple sauce as follows:

1. Saute' a pinch of red pepper flakes, some oregano, some basil, and chopped up cloves in garlic in some olive oil. You can optionally add a bit sausage or salami for a bit more flavor.

2. After the garlic has browned a bit, add the chopped up sauce tomatoes along with a pinch of salt and balsamic vinegar or wine.

3. Let it simmer on low for a long time. Long simmering is the key to saucy deliciousness.

4. Serve on pasta, gnocchi, or polenta.
